It is a common crowd-pleaser at gatherings.<\/p>\n<p>The freekeh grain has a nutty taste. It pairs well with the butter and ginger powder in this recipe.<\/p>\n<p>&nbsp;<\/p>\n<h3><i>Ingredients<\/i><\/h3>\n<p>1 chicken cut in quarters with skin and bones<\/p>\n<p>2 cups green freekeh (smoked wheat) washed and soaked for 15 minutes<\/p>\n<p>2 tablespoons butter<\/p>\n<p>1 tablespoon oil<\/p>\n<p>1\/2 teaspoon ginger powder<\/p>\n<p>1\/2minced garlic<\/p>\n<p>1\/2 teaspoon red pepper<\/p>\n<p>2 cubes chicken bouillon<\/p>\n<p>3 1\/2 cups boiling water<\/p>\n<p>1 cup fried almonds<\/p>\n<p>Salt to taste<\/p>\n<p>&nbsp;<\/p>\n<h3><i>Instructions<\/i><\/h3>\n<ol>\n<li>Preheat oven to 392F\/200C.<\/li>\n<li>In a pan, add butter and oil.<\/li>\n<li>Add the chicken to the pan.<\/li>\n<li>Sprinkle chicken with pepper, garlic and ginger.<\/li>\n<li>When the bottom side of the chicken turns light red, flip and season the other side.<\/li>\n<li>Transfer chicken onto a baking pan.<\/li>\n<li>Pour 1\/4 cup boiling water in the baking pan, cover and bake chicken on middle rack until cooked, for 40 minutes.<\/li>\n<li>Drain freekeh and add to baking pan, keep stirring on medium heat until freekeh dries a bit.<\/li>\n<li>Stir for 1 minute.<\/li>\n<li>Add 3 1\/2 cup boiling water to freekeh and the chicken bouillon.<\/li>\n<li>When it boils, cover tightly and continue cooking on low heat for 45 \u2013 50 minutes.<\/li>\n<li>Check on freekeh every 15 minutes so it won&#8217;t dry out and burn, but don&#8217;t mix with spoon.<\/li>\n<li>Dish the freekeh onto serving plate, place the chicken on top and garnish with fried almonds.<\/li>\n<\/ol>\n<p><em>Recipe provided by Ayda Noofoori\u00a0<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>In Syrian culture, potlucks bring families together throughout the year.
