{"id":2045,"date":"2018-11-25T09:00:50","date_gmt":"2018-11-25T09:00:50","guid":{"rendered":"https:\/\/cusjc.ca\/25hour\/?p=2045"},"modified":"2018-11-25T01:38:13","modified_gmt":"2018-11-25T01:38:13","slug":"curry-chicken-banh-mi","status":"publish","type":"post","link":"https:\/\/cusjc.ca\/25hour\/index.php\/2018\/11\/25\/curry-chicken-banh-mi\/","title":{"rendered":"Curry Chicken Banh Mi"},"content":{"rendered":"<p>This chicken curry banh mi combines a staple of Vietnam with the savory flavours of the Indian subcontinent.<\/p>\n<p>It&#8217;s simple, easy, and delicious!<\/p>\n<p>&nbsp;<\/p>\n<h2>Ingredients<\/h2>\n<p><em><strong>For the pickled carrots<\/strong><\/em><\/p>\n<ul>\n<li><em>1\/2 cup julienned carrots.<\/em><\/li>\n<li><em>1\/4 cup cider vinegar<\/em><\/li>\n<li><em>1\/3 cup water<\/em><\/li>\n<li><em>Pinch of sugar<\/em><\/li>\n<li><em>Pinch of dill<\/em><\/li>\n<li><em>Pinch of kosher salt<\/em><\/li>\n<\/ul>\n<p><em><strong>For the chicken curry<\/strong><\/em><\/p>\n<ul>\n<li><em>1 green onion<\/em><\/li>\n<li><em>1 garlic clove<\/em><\/li>\n<li><em>Pinch of ginger<\/em><\/li>\n<li><em>50g chopped tomatos<\/em><\/li>\n<li><em>100g chicken, cut into 2.5cm pieces<\/em><\/li>\n<li><em>25 ml natural yogurt<\/em><\/li>\n<li><em>Kosher Salt<\/em><\/li>\n<li><em>Fresh cracked black pepper<\/em><\/li>\n<\/ul>\n<p><em><strong>For the banh mi\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/strong><\/em><\/p>\n<ul>\n<li><em>50g pork p\u00e2t\u00e9<\/em><\/li>\n<li><em>2 tablespoons mayonnaise<\/em><\/li>\n<li><em>Sriracha, depending on level of heat desired.<\/em><\/li>\n<li><em>Fresh cilantro to taste<\/em><\/li>\n<li><em>1 teaspoon light soy sauce<\/em><\/li>\n<li><em>Fresh cracked black pepper<\/em><\/li>\n<li><em>Kosher salt<\/em><\/li>\n<li><em>Garlic powder to taste<\/em><\/li>\n<li><em>1 mini baguette or French roll<\/em><\/li>\n<\/ul>\n<h2><\/h2>\n<h2>Instructions<\/h2>\n<p><strong>Pickled Carrots<\/strong><\/p>\n<ol>\n<li>Boil carrots in water for 1 minute. Rinse under cold water and drain.<\/li>\n<li>Combine water, vinegar, sugar, dill and salt in a small pan. Bring to a boil, then reduce heat. Keep on low heat for 1 minute.<\/li>\n<li>Toss carrots and vinegar mix to coat well. Let it sit until the veggies get slightly limp, for 15 to 20 minutes. Drain and set aside.<\/li>\n<\/ol>\n<p><strong>Chicken Curry<\/strong><\/p>\n<ol>\n<li>Thinly slice the green onion.<\/li>\n<li>Finely chop the garlic.<\/li>\n<li>Heat oil in a pan on medium heat. Cook the green onions and for a couple minutes. Add the tomatoes, curry powder and ginger spice, and cook for another couple minutes. If the pan gets dry, add water to ensure the spices don&#8217;t burn.<\/li>\n<li>Add the chicken and cook until it&#8217;s coated and beginning to brown.<\/li>\n<li>Add 75ml water and continue to cook. Reduce to a medium to low heat, and cook until there are no signs of pink juices in the chicken.<\/li>\n<li>Take the curry off the heat and stir in the yoghurt.<\/li>\n<li>Season to taste with salt and pepper then set aside.<\/li>\n<\/ol>\n<p><strong>Assemble the Banh Mi<\/strong><\/p>\n<ol>\n<li>In a small bowl, mix together mayonnaise, sriracha, soy sauce, garlic, salt and pepper in a small bowl. Stir until all ingredients are mixed together.<\/li>\n<li>Slice baguette down the middle. On one side, spread the mayonnaise mixture.
